Silverthorn River Dragon Cap Classique

The phrase “there be dragons” was used on ancient maps to denote places of danger or those that needed to be explored. We’re going with the latter sentiment in the case of this exciting fizz: we’ll be exploring it until we feel it duly conquered.

Our pick this week:

Silverthorn River Dragon Cap Classique

R269.99, Woolworths

Why we love it:

New to Woolworths, Silverthorn’s River Dragon Cap Classique is a quietly confident sparkler with a bit of personality. Made from colombard, it pours a fresh green-tinged gold with a fine, lively fizz. Expect chamomile blossom, stone fruit and a hint of the tropics on the nose, followed by a gentle mousse and a long, refreshing finish. It’s elegant without trying too hard and pairs beautifully with poached trout, duck pancakes or even a cosy black mussel potjie. A bottle that feels celebratory, but still very much grounded.
